SAINT AUBIN &
CHASSAGNE MONTRACHET

CÔTE DE BEAUNE BURGUNDY

There is little doubt that Burgundy is one of the premium wine growing areas in the world. The tapestry of terroir and history create a unique and varied choice of wines, each expressing their origins.

Our vines planted at St Aubin are older than those in Chassagne Montrachet. Indeed, some are over 70 years old, their roots stretching through the limestone/clay soil, offering fine wines of lean minerality.

Our chassagne vines are planted in a deeper soil that give the resulting wines a sumptuous roundness making them hard to resist!

From 2022 we are classified as organic and can not wait to see how the wine turns out.

HUGH LIDDELL

I started my journey in the wine industry in 2003, here in Burgundy. Inspired, I returned to England to set up a sparkling wine house Cottonworth, on our family farm in Hampshire. However, something kept drawing me back to Burgundy, resulting in us buying parcels of vines in Saint Aubin and Chassagne Montrachet.

I started farming the vines in 2021, and what a baptism of fire! 

I managed to navigate our way to harvest without too many problems and now have two delicious wines ready for drinking! 2022 was a much easier ride and now is aging in barrel in our vaulted cellars.

THE WINERY

The whole set-up is very small and compact. The winery is a few metres from our house and the vaulted cellars where the wine is fermented and aged are under the house. Winemaking is mainly about temperature and the cellars seem to inexplicably be the correct temperature and humidity at the appropriate time. As the grapes come in from the vineyards they are pressed very slowly and gently to extract the very best juice. This is then held in tank for between 12-24 hours when it is racked off into barrels where the fermentation and ageing takes place.

This wine is typical of Saint Aubin; light; expressive with a mineral core running through it. An elegant wine particularly on the nose.

CHASSAGNE-MONTRACHET 

Vineyard: LES LOMBARDES

Grape: CHARDONNAY

Region: BURGUNDY, FRANCE

This is a slightly fuller wine in the mouth, with gorgeous dried flowers and almond notes on the nose.
